Massaman Coconut Curry with Beef Recipe

Massaman coconut curry is not only NOT spicy, it's also SWEET. As a result, most westerners love it. It's also very easy to make at home.

Accompaniments

  • 1/4 cup roasted peanuts, whole or pieces
  • white rice
  • lime wedge
  • cilantro, chopped
  • fish sauce

Instructions

  1. Bring coconut milk and broth to a gentle simmer and add 1 TBSP of the Massaman curry paste and pinch salt and mix well for a few minutes. Taste and add additional Massaman curry and coconut sugar to your personal liking.


    Note: In my experience in Thailand, broth was not always used in coconut curries. If you want a more soup-like consistency, use broth. If you want a creamier texture, it's OK to skip the broth.

  2. Add veggies and simmer a few minutes.
  3. Add beef and simmer a few more minutes until cooked to your liking.
  4. Top with peanuts and cilantro and serve with a side of rice. Add a squeeze of lime and fish sauce, to taste.
